When cutting mortice and tenon joinery what should be cut first, the mortise or the tenon? Why?

Doesn't matter which you do first, which ever you think best. Just remember that you will need to do some "tweaking" of the fit. Because of this I cut the mortise first and then cut the tendon to fit. Tweaking with plane, saw, sandpaper and chisel as needed.

I agree with Chuck. It is easier for me to make the tenon smaller than to make the mortise larger.and expect a good fit.

Mortise first then fit tenon to mortise.

This place is just to nice! Lets keep it there.

I thought this one might put the cat in with the pigeons but
people are too sensible!

In the past I have heard arguments on which should be done first
but never could see the point other then personal preferences.
