What fun it was to get together on a beautiful day in Fremont! Here are a couple pics from my phone, there were real cameras there, so more will appear I'm sure. Great to see Dennis, Robbie, Tom and Kris and to meet Lawrence!

Hmmm, can't seem to embed the video, but if you follow this link you can see the unveiling of the piggy:

It was so great to finally meet you guys. I hope we can get together again so soon, especially as some of us live so close (Dennis is practically a neighbor!)

Tom, your pig (and hospitality) were second to none. The day seemed to fly by and Karen, the boys and I all are all so happy to have been able to have come.

Thank you again,
Lawrence

It all starts inside here - affectionately known as a Cajun Microwave.

About halfway through the cooking the pig is turned and the skin & fat are scored to create crispy little morsels of cracklins worthy of a candy dish.

Then it's time for the feast!

Can only 'attach' five pix per post - more to follow.

Hey Folks,

Thanks to everyone who stopped by, it's the people that make the party, not the pig.
We had a great time hosting the shindig, and look forward to the next one (after a little recovery time).
It was great to finally meet Lawrence and family, after about ten years of correspondence.
Thanks also to all the picture takers. I'm so busy during the party that I never have time to shoot photos.

The one shot I did take was early in the morning before I washed the salt cap off of the pig. We can add this to Dennis' chronology.
Two boxes of kosher salt dry the skin overnight, so that it will soak up the fat. Then, when it's directly under the fire, it pops like popcorn and makes a wonderful crunchy, porky morsel. :D

Cheers,
Tom

BTW, Tom, the pork is every bit as good this evening as it was straight out of the "oven".

Of course it's a family affair.

Hey Mango,

Actually, it was Peggy Tzu that was doing the drooling. And pugs have a worried expression all the time, even when they're happy. What she's most concerned about, is whether this person is going to share with her, or is she going to have to start begging from someone else.

The last time she was at one of these, she (and Verna's Sunny Day) stood under the carving table and took pork showers as the juices ran off the table. When they dried, they both looked like punk rockers with spikey hair do's. It wasn't so bad this time, but she still needed a bath when she got home.

Cheers,
Tom
