You know that the finish you put on the project depends on the preparation, and some lumber specie have more open grain or coarser grain texture than others. What you want to have for a finished appearance depends on that grain texture. You won't ge the same look to the finish with oak as you might with birch or maple or cherry because of their different grain characteristics and the way the wood takes a finish.
